as new residents in arizona we were excited for our first foray into the fine dining scene! binkley’s was our first choice, a contemporary french influenced american restaurant in cave creek, a small city north of scottsdale. chef kevin binkley has quite an impressive resume: an alumni of the french laundry and has been nominated for the james beard best chef of the southwest every year since 2005.
crostini with goose liver mousse, apricot jam, pickled cornichon

mini sloppy joe, potato crisp and puree, caper berry
chicken and waffles: buttermilk waffle, chicken mayo with maple syrup, puffed chicken skin
steak tartare: preserved lemon, brandy gelee, frisee, white anchovy, pickled onion, crouton, whole grain mustard
prosciutto & melon salad: butter lettuce, vanilla hazelnuts, champagne grapes, verjus vinaigrette
flash frozen three varieties of heirloom tomato, mozzarella cheese, olive oil
crispy seared foie gras: kabocha squash johnny cake, hominy, fennel, arugula, huckleberries
softshell crab: peach & green papaya salad, red onion marmalade, crispy mustard greens
blueberry bomb: blueberry juice sphere, lime honey

tuna: pepper roasted figs, sugar snap peas, roasted boiler onion, sorrel
polenta crusted swordfish: apricots, marcona almonds, seabeans, polenta pasta, balsamic glaze
mangalista pork loin: snow peas, baby turnips, butternut squash, pluot
herb crusted ribeye: curry poached lobster mushrooms, slow roasted shallot, summer squash, herb coulis
wonderful selection of cheeses both international and local varieties
black truffle cheese fondue: emmentaler, gouda, gruyere
celery, purple potatoes, popcorn, dried berries, toasted brioche, apricots
personal cheese plate, standout favorite was the l’explorateur (on the spoon)
after meal digestif tea, hibiscus, meyer lemon, mint, siphon brewed tableside
dark chocolate pot de creme, peanut butter crumble
pineapple consume, ginger caviar
smoked salted caramel couscous puddin’: huckleberries, raspberries, micro shiso, black pepper-cashew crumble
we had a great meal and wonderful experience at binkley’s! the dishes were inventive and delicious, service was excellent, and the restaurant had a friendly ambiance. a must try for anyone visiting arizona and certainly a restaurant we will be returning to.
